Fish soup

Here's a flavorful recipe for fish soup:

Ingredients:

  • White fish fillets (like cod, haddock, or tilapia): 1 pound, cut into chunks
  • Fish stock or vegetable broth: 4 cups
  • Onion: 1 medium, chopped
  • Garlic: 2 cloves, minced
  • Carrots: 1-2, sliced
  • Celery: 1 stalk, chopped
  • Tomatoes: 2 medium, diced (or 1 can of diced tomatoes)
  • Bay leaf: 1
  • Thyme: 1 teaspoon (dried) or a few sprigs (fresh)
  • Olive oil: 2 tablespoons
  • Salt and pepper: to taste
  • Lemon juice: from 1 lemon
  • Fresh parsley or dill: for garnish

Instructions:

  1. Sauté vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

  2. Add broth and tomatoes: Pour in the fish stock (or vegetable broth) and add the diced tomatoes, bay leaf, thyme, salt, and pepper. Bring to a boil.
